The Chef's Special Kaiseki is a carefully-selected course menu, designed to bring you the finest ingredients prepared for optimum flavor. From June to August, this course features the delicate yet rich blend of amami and umami found in hairy crab, prepared as sashimi, shabu-shabu, or with kettle-cooked rice.

Steamed hairy crab and sea urchin rice, sea urchin,
